Sea lettuce and pomegranate, split pea and sugar kelp soup, quince and dulse jelly … These are some of the recipes that Fiona Bird makes at her home in South Uist. A former BBC MasterChef finalist and author of the book Seaweed in the Kitchen, she describes the nutritional properties of seaweed and how they might contribute to a healthful diet. She looks back at uses of seaweed over the centuries and provides advice on gathering and using it.

“Listening to the susurration of gentle waves on a warm day, whilst I harvest seaweed is a simple pleasure. At other less clement times, the icy drench of a crashing wave is rewarded in the kitchen because there, the seaweed releases an ocean secret. Some call it umami. Dining on seaweed, which you’ve harvested, prepared and cooked yourself is an ocean to plate experience.”
